Recipe: Grilled Peaches with Ricotta Cheese

One of the best aspects of late summer is the abundance of local ripe peaches and their many uses.  In our family I especially enjoy grilling them.  It’s simple to prepare not to mention how fancy they look plated.  This would make an excellent dessert to serve guests after a nice meal.  Topped with fresh ricotta cheese and a drizzling of a balsamic reduction, you will feel spoiled but appreciate how fresh and healthy this dessert is.  Enjoy!

Grilled Peaches with Ricotta Cheese

Serves: 2-4
 
An easy and delicious recipe for grilled peaches with ricotta cheese and a balsamic vinegar reduction drizzle.
Ingredients
  • 2 ripe peaches, halved with pits removed
  • ½ cup fresh ricotta cheese
  • ¼ cup balsamic reduction
  • 4 sprigs fresh mint
Instructions
  1. Oil the grate (grill) and heat on med-high. When the grill is nice and hot, grill each half peach for 4-5 minutes per side. Placed peaches on a plate with cut side facing up. Place a dollop of approximately 2 tablespoons of fresh ricotta cheese in the center of each peach half and drizzle with balsamic reduction. Garnish with a sprig of mint. Enjoy!
  2. *Balsamic Brown Sugar Reduction Recipe
  3. /2 cup balsamic vinegar and ¼ cup of packed brown sugar
  4. Directions:
  5. Cook the vinegar/brown sugar mixture down on med-high heat until it is reduced by half, approximately 3 minutes. Remove from heat and allow to cool before serving.

    YUM – I had a sweet balsamic in the cabinet that I had yet to use, fresh peaches, & an urge to try my own ricotta….. what a perfect light dessert, THANK YOU

    Should the peaches still be slightly firm? I like the sound of the balsamic brown sugar glaze.

    Hey Marc,
    Ripe put slightly firm. I found overly ripe peaches to get too soft when grilling. Hope that helps.

    I just saw a recipe in Gourmet for grilled nectarines with ricotta ice cream which I have been wanting to make but got side tracked. This looks even easier since the ricotta is just added. We love grilled peaches with balsamic — one of our favorite flavor combinations. Yum!

    This looks simple and delicious. I’ve never tried grilling peaches before, but I’ve done just about every other fruit. Balsamic reduction sounds fabulous w/ this dessert.

    I get to make Fresh Peach Ice Cream for a dinner party next weekend!
