Watermelon Mint Lime Martini

Last update: July 15, 2016 By Alice Currah 26 Comments

I’ve never been one to make a cocktail for the reason of “just because.”  But today I’m making an exception because there was half a baby watermelon in my fridge which needed to be used up.  Instead of eating it I felt like making a drink out of it, and let me tell you what a fine drink it is.

Made with vodka and not gin or vermouth, I’m still calling this cocktail a watermelon mint lime martini because… because I feel like it.  And if I sound a little sassy, it’s because I am.  Today was a rough day and I’ll just leave it at that.

I wasn’t planning on writing a post about it but after taking a small sip, I changed my mind because you really  need to make one this weekend if you’re a cocktail type of person.  Unfortunately there are no step by step photos with for this drink but I think you’ll manage just fine.

Have a great weekend everyone!

Love the simplicity and summer celebration of this recipe! After some “taste testing” adventures, I found 1 T simple and a quarter lime squeeze to best suit. I’d recommend starting with lower amount and adding per taste. Neighbors who tend toward significantly sweeter than my taste loved these even with change, so I thought that was a good gauge! A lovely and refreshing cocktail–thank you!

Additional notes: even without mint, yummy! Use a hearty 2 c. watermelon cubes blended then strained for 1 c. juice. I vitamixed and then did one pass through a fine mesh strainer– mostly texture free. With a pretty effective blender (and seedless melon), an acceptance of watermelon “pulp,” and a disinclination for additional work, you could also skip straining and just blend all at once to expedite having it in your face. 😊

I have been making these martinis for friends the past three weeks and they are a HUGE hit! The only thing I have changed is to replace regular vodka with Cucumber Vodka – it’s fantastic. Just adds another light layer of flavor.
