Smoky Ham Tomato Edamame Pasta

Thank goodness for quick and easy pasta dinners using whatever is in my refrigerator and pantry.  Using left over spiral ham I quickly cubed it and fried it up to help it release its smoky flavor more commonly associated with crispy bacon.  Next, I sauteed some minced garlic on low eat just enough to soften it without burning it.  Combined with some tomatoes, edamame (peas would have worked just fine, too), fresh basil, and balsamic vinegar, I tossed everything including the pasta with some salt and pepper.  And dinner was served.  I’m guessing some of you might have all you need for this dish at home.  If you don’t have ham, feel free to substitute bacon, chicken, or sausage for the meat.  Enjoy!

Smoky Ham Tomato Edamame Pasta

An easy pasta dinner made with ham, tomatoes, and edamame
Ingredients
  • ½ pound pasta (your choice), cooked al dente and drained
  • ½ pound cubed cooked ham
  • 2 tablespoons olive oil
  • 2 cloves minced garlic
  • 2 tablespoons balsamic vinegar
  • ½ cup cherry tomatoes, halved
  • ½ cup cooked edamame
  • ¼ cup chopped basil
  • salt and pepper
Instructions
  1. Cook ham in a dry pan on medium high heat for 3-5 minutes until you see charring on the sides of the ham, and set aside. In a large skillet, heat olive oil on medium heat. Add garlic and remove from heat immediately. Allow the garlic to gently cook for one minute. Stir in the balsamic vinegar. Add the pasta back to the pan and toss it with the tomatoes, edamame, and basil. Season with salt and pepper to taste.

    Beautiful flavors, really easy too, served up in under 20 minutes. the balsamic adds a subtly sweet undertone to the dish.

    This looks so good! I love when I’m able to whip things up at the last minute just by rummaging through my fridge! This definitely seems quick and easy enough to make it a weeknight dinner.

    I love that when it seems like there is nothing to make for dinner, pasta always works and is always satisfying! This recipe looks yummy…and I have actually never had edamame before, but am looking forward to trying something new!

    Yum! This pasta looks pretty amazing – I love all the colors! It doesn’t look too difficult either – definitely doable for me and my more basic cooking expertise!!!

    I often throw “whatevers” into the pasta when I’ve nothing planned for dinner. And yes, always have these ingredients on-hand! This would also be a delicious cold pasta salad for a BBQ.
