United Way Hunger Challenge Recipe: Fast and Easy – Deluxe Spinach Bacon Breakfast Wrap under $1

breakfastwrap2My kids love Breakfast Burritos and Quesidillas made with cheese, eggs, and tortillas.  My husband and I prefer more fillings and I call ours “Deluxe Breakfast Wraps”.  These make great to-go meals when you need to eat on the run and are unbelievably fast to prepare with no need to scramble eggs in a pan.  A plain burrito wish cheese and egg costs about $.50.  The Deluxe wrap runs about $.98.  I’ll break down the cost in the end.  But for now Here is the recipe.

Deluxe Breakfast Wraps

Ingredients:

1 eggs ($.12)

flour tortilla ($.25)

2 tbs. of cheese (.$15)

2 tbls. of bacon ($.27)

1/4 spinach (.03)

2 tbls of salsa ($.15)

non-stick spray (.01)

total costs: $.98

Spray a coffee mug with non-stick spray.  Place egg in the mug and quickly scramble with a fork for just a couple of seconds.  Put your egg mixture in the microwave for 1 minute.  In the mean time place about 1/4 cup of spinach across the tortilla.  Your egg should be done by now.  Cut your egg in half and place both halves on top of the spinach.  Then sprinkle cheese on top, bacon next to the egg, salsa on the other side of the egg.  Fold the side ends in slightly and finally roll from the bottom up.  Place your wrap with the seam side down on a plate and either microwave for 30 seconds or fry on each side for 1 minute for a crispier wrap.  You can make these in under 4 minutes, even quicker if you don’t fry them.  You can also make these in advance and freeze them and when you’re ready to eat one, microwave for 2 minutes. Voila, enjoy your wrap!

*We made these yesterday and our cost slightly more because we added a little more including an extra egg and salsa but you can definately make this for under $1.

    I love, love, love this recipe. We make a batch of these every Sunday and freeze for the week. To make it a little more low-fat we use Canadian bacon instead of regular bacon. It’s about the same cost. I’ve forwarded this on to so many people in my office because they always ask, “what smells so good?” every time I heat one up in the microwave.

    Thanks everyone for your comments. I used to buy a similar type of wrap at SBUX for over $3 and a cup of coffee. That is nearly $5/day I was spending. I can make my own which taste way better and with a cup of coffee spend about $1.50.
