Late Night Dessert For One: 10 Minute Apple Crisp

I am going to be real and raw with you tonight.  I’m a desperate woman this evening. I am in dire need of a late night sweet thang (<-and no that is not a typo).  If you are familiar with my blog at all, I ask for your forgiveness in advance.  There will not be the usual food porn you are accustomed to seeing on my blog in this post. I replaced my original photo with this one because frankly I’ve come to my senses and food porn is only good porn when shot right.  When I say food porn, I mean a term used by food bloggers describing drool worthy photos of food.  Instead I am posting candid photos as it happened. But I have a feeling you’ll forgive me after making this special treat. Don’t you agree this is a much better photo? Doesn’t it make you want to eat it through the screen?

I didn’t intend to write a post on my sweet thang.  But because I love sharing and you are my friend I will share my dirty late night secret with you as long as you promise to share it with others.  Some of you are probably familiar with the 5 minute mug chocolate cake mug floating around the internet.  If you’ve tried that recipe you know it is really awful (REALLY AWFUL!).  But what I have for you… is simply amazing.  What I’ve made for myself out of sheer desperation for needing to satisfy my late night sweet tooth is an apple crisp a la mode made for one person (me!) in the microwave with the added help of a frying pan.   I wish so much you were here to enjoy this with me but unfortunately its only for 1 person and that person at the moment is ME! Too bad you aren’t here to taste it because it is really really good. But instead I give you my recipe. Now do yourself a favor and make one too. This will revolutionize your late-night desperate dessert routine.  And by the way, you’re welcome! Enjoy!

Alice’s 10-minute Apple Crisp Recipe

Ingredients:

Filling-

1 apple, peeled and thickly sliced

3 tablespoons sugar

½ teaspoon cinnamon

¼ teaspoon nutmeg

½ teaspoon cornstarch

Crisp Topping-

1 ½ tablespoons butter

2 tablespoons brown sugar

2 tablespoons oats

2 tablespoons flour

½ teaspoon cinnamon

Directions:

Starting with the crisp topping: Heat a small frying pan on med-high and cook/fry the all the ingredients for the crisp topping mixture until it is a darkened golden brown making sure to constantly stir so it doesn’t burn (approx. 3 min). Remove from heat and set aside.

In a small mixing bowl combine sugar, cinnamon, nutmeg, and cornstarch. Add sliced apples and with your hand, massage the dry ingredients into the slices until all the dry mix is used up.  Place apple mixture in a microwavable cereal bowl, cover with plastic wrap (folding some of it back to vent it), and microwave for 4 minutes.  Remove from microwave and add crisp topping and gently press it down into the apple mixture with the back of a spoon.  Place the bowl back in the microwave and heat for 30 seconds.  Remove from microwave and allow to cool for 2-3 minutes. Top off with vanilla ice cream and enjoy!

    I stumbled with this recipe while googling a super simple apple crumble for one, and let me tell you something… I have just died and gone to apple crisp heaven, this is sooooo good I just want to eat it everyday. Keep’em coming

    I tried this!!!! surprisingly though it tasted much better after i shoved it into the fridge and ate it when it was cold. The topping was still crunchy with a little bit of chewy-ness that makes it even better hehe 🙂 should use less sugar for the filling though! and less butter for the topping! but it’s all gooood :-bd

    This dessert was amazing!! I was craving something quick and easy and something that wasn’t horrible for me. I came across this and decided to try it and it is honestly better than most apple crisps I have tried!! It turned out perfect. I used less sugar and splenda blend brown sugar to lower the calories a bit more. I also used a bit less butter. Thanks for sharing 🙂

    Sounds great! But, quit using the plastic wrap in the microwave. Old news now; but, can cause cancer if you do this!!! Instead use a microwaveable bowl with a lid and no plastic! Best if it’s a crock type bowl and lid that is microwave safe.
