Spinach Bacon Penne Pasta

[donotprint] I’ve been light on posting recipes here the last couple weeks – sorry.  Last week my children had the whole week off from school and every night we’ve been staying up far too late watching the Winter Olympics in Vancouver BC.  I usually work on posting recipes after they go to bed but instead have been caught up in Olympic mania.  Can you blame me?  Each night we’ve been watching our favorite athletes compete and its been thrilling!  As a parent of 2 young daughters who play sports all-year round, the Olympics get our full attention in our house.

But today I have a really simple and wonderful pasta recipe for you.  It is made with penne pasta, spinach, bacon, and a few other ingredients.  The flavor of the pasta is very light and seasoned just enough allowing the bacon and spinach to shine.  This would be the perfect recipe for a weeknight meal or as a side dish.  Enjoy! Spinach Bacon Penne Pasta Recipe

Ingredients:

16 oz package of penne pasta, cooked al dente

1/2 pound bacon, cooked and crumbled

3 large handfuls fresh spinach

2 tablespoons olive oil

2 tablespoons balsamic vinegar

2 cloves fresh garlic, minced

1/2 cup grated Parmesan cheese

Sea Salt and Pepper to taste

Directions:

In a large sauce pan, toss all ingredients in and cook on medium-high heat until fresh spinach is cooked.  Season with salt and pepper. Enjoy!

    i think i’m going to make this, but substitute some proscuitto ham for the bacon…i’ll just cut it in ribbons like i would for a chef salad.

    Thanks for sharing, I was in a slump and this recipe did nicely to get me out.
    I didn’t have to wander aimlessly around the grocery store trying to figure out what to make for dinner. I served it with herb roasted chicken and it was great!

    This is a fantastic recipe, so easy to make and with ingredients I actually have! I did make it with turkey bacon which although not as tasty is a bit healthier. I also added freshly chopped tomato right at the end which added a nice acidic touch– I bet sun-dried would be good too. Thanks!!

    Isn’t it amazing how the simplest recipes have the best results? This looks like one of those, although I might add sundried tomatoes (my latest craze).

    This is a fabulous meal. Would have pared nicely with a cabernet had I had any! I added 1/4 onion, 4 fresh mushrooms and two fresh tomatoes to the recipe. Very good. Thank you, Alice.

    i made this for dinner and my boyfriend and i thought it was delicious! the funny part was that i’ve been wanting to make this for days, but he was hesitant and he finally gave in tonight. the only thing i did differently was that i only used 1 tablespoon of oil and 3 cloves of garlic and sauteed them together for a few minutes before throwing everything else in. thank you for sharing this yummy recipe! i am looking forward to trying your other creations soon.
